| so i decided to blog about all the food that i've been making over the last few months. i've always had a love for cooking. if you've read my blog on fb, you'll know why.
egg custard tart

i've made these a few times before in college, so it's not my first time making them. the most challenging part is the crust — to make sure they're thin enough, but sturdy enough to hold the custard. i still have yet to master that, but the taste is just perfect.

i also tried making some giant ones, but since they took longer to be in the oven, i totally forgot about them! (damn that tv!!) hence, the VERY burnt accidental portugese style egg tart.

shrimp balls (that just doesn't sound right, does it?)
well, i actually wanted to make the fish kind, but since i can't find that special kinda fish, i'll just improvise! 
first, i minced the shrimp into tiny pieces. then i used a mortar to smash it until it became a paste. 
after that, i just roll them into a ball and dump it in the oil! very easy! it just takes a lot of time to smash that shit up! hahaha...

uptown porkchops with apples and herb mashed potato the recipe called for pork tenderloin, but i was being cheap, so i bought porkchops instead. it'll just work the same. i rubbed the chops with salt, freshly grounded pepper, basil, fresh parsley, and lemon zest. put them in the oven and baked it for about 20 mins and there they are! the key to keep the meat juicy is to leave it sit alone for 5-10 minutes after taking out from the oven. that way, the juice will relocate within the meat. so don't cut them up right away after you remove them from the oven.
another tip to help make the meat more tender is to rub them with a little bit of cornstarch before you marinate them. that goes for any meat in any recipe.

then i moved onto the apple sauce that go with the chops. i had some green apples laying around, so i use them instead of red. i sliced them up, cook them in a pan with some seasonings and lemon juice until they're soft. 
the mash potato is very easy to make. just boiled the potatoes for about 20-30 minutes until soft. use a smasher, and smashed them up with some butter and milk. i also seasoned it with salt, pepper and fresh parsley to tide the taste with the chops. i kept the skin of the potatoes on because i want to get the nutrients from the skin.
and then... wala!
apple raisins muffins
with the left over apples, i made some apple raisins muffins to bring them into the office. just like making regular muffins, but i added raisins and apples. first, i cooked the diced apples and raisins in a pan with a lot of some butter and brown sugar. also added some cinnamon and freshly grounded nutmeg. (i LOVE nutmeg! best thing EVER!!) 
then i let the mixture cooled down to room temperature and mixed them into the dry ingredients, and baked them in a muffin tray. and then.... wala! the house smells extremely good when i made them!!
chinese mochi (糯米兹)

this is my first attempt in making mochi. it didn't look that great (damn that sticky dough!), but i did master the taste of it! i mixed crushed peanuts, sesames, sugar, and coconut to make the 'stuffing'. it was really good! i'm going to have to revisit this recipe, and find a better way to work with the dough. if you have any suggestions/tips, send them my way!!

okay, i know this is a really long entry, i'll try to break them down in the future.

| who the fcuk design a newsletter in freakin' Word?! seriously! that is a total insult to designer. if you need something done in Word, then you do NOT need a graphic designer. you can go FIGURE IT OUT! i can't wait till i can get out of this shit hole.
have any of your clients or your bosses indirectly insult your knowledge in such a way?

| my trip to california was great! not only i get to meet up with my cousins karen and katty, but it was also a trip for self discovery. i had the best time ever with the KLs! i miss them so much. i am so much more grounded when i'm with my family, and be able to reflect my life with the help from them. it's incredible. i am very thankful to have such a wonderful and beautiful family.
i noticed what my life is missing. i got to do a lot of the things that i enjoy in life while i was in LA. things that ohio can't offer me. i love the beach, i love going surfing, i love biking along the beach trail, i love taking dance classes. i still have to go hike up the hollywood sign, i still have to visit the getty museum, i still have to discover more different neighborhoods. there are just so much to do! i was so much happier as a person, because i was doing all the things that matter to me. i feel more active, i feel more fulfilled. and i feel good about myself, i feel fit, and i didn't have to depend on anyone for that. it was a great feeling.
i also had a huge discovery on relationships. it was the hardest lesson that i've ever had to learn, but it was rewarding. knowing what i know now, i want things to be better – for good.
other than that, i also experienced my first earthquake in my life. that 5.4 magnitude earthquake was shaking it up while i was there. i was in my bedroom getting ready to head out for the day, and all of a sudden, everything started shaking. i didn't know what to do, and didn't want to believe that i was in an earthquake. so i just froze, wishing that this will be over soon. it went on for quite a while. as soon as it was over, i rushed out of my room, screaming for my roommate Tricia, and asked if that was indeed an earthquake! i started to hear ppl running out the street, yelling "i can't believe that was an earthquake!" – yea, me neither, dude. knowing that no one is hurt, i'll say that i think it was SUPER COOL to be able to experience that.
oh, and i also got attacked by a mice at the airport! it was yucky!
